What Does A Chafing Dish Actually Do?
It holds cooked food at a safe serving temperature over time. That is the whole job, and it is the difference between a buffet and a health problem.
A chafer is not a cooker. Food arrives hot and the chafer keeps it there — a water pan absorbs the heat from a fuel source below and passes it gently to the food above, so nothing scorches or dries out while the line moves.
The reason it matters at an event: guests do not all eat at once. The last person through the buffet is eating forty minutes after the first, and without a chafer they are eating something cold.

How Many Chafing Dishes Do You Need?
Count dishes on the menu, not guests.
Every hot item on a buffet needs its own chafer — you cannot share one between a main and a side. Three hot dishes means three chafers, whether you are feeding forty people or four hundred.
Guest count changes the refill rate, not the chafer count. For a large event your caterer runs replacement pans rather than bigger chafers.
The one people miss: a second line. If you are running two buffet lines to halve the queue, you need two sets of everything.
Ask your caterer how many hot items are on the menu. That is your number.

Both hold the same 8 quarts. Pick on how visible the buffet is, not on how much food you are serving.
What Does A Buffet Line Need Besides Chafers?
A chafer on the floor is not a buffet.
It needs a table at the right height and length — the line’s length is set by the number of dishes, not the guest count. It needs a linen, ideally full-drop, because a buffet table has boxes and spares underneath it.
It needs plates at the start and flatware at the end (not the start — nobody can hold cutlery and serve). And a bin where the line finishes.
If anything is being cooked rather than held, that is cooking equipment — a different order.
How Does Delivery And Return Work?
Chafers arrive with the rest of your order and go where the buffet is going.
